The chewy pearls are what make a tapioca pearls cocktail so much fun, but getting the texture right takes a little preparation. Follow these simple tips for the best results:

  • Boil the pearls until they’re chewy. Bring a pan of water to a rolling boil, add the tapioca pearls, and cook for around 20 to 30 minutes (or according to the packet instructions), then leave them to rest in the hot water for another 15 to 30 minutes until tender.
  • Sweeten while they’re still warm. Stir the cooked pearls into a simple syrup or brown sugar syrup and leave them to soak for 15 to 30 minutes to add flavour and keep them glossy.
  • Don’t refrigerate them. Chilling cooked pearls makes them firm and chewy in all the wrong ways. Instead, keep them at room temperature until you’re ready to use them.
  • Prepare them the same day. Tapioca pearls are at their best within a few hours of cooking, so make them shortly before serving your cocktails.
  • Use a wide boba straw. Standard drinking straws are too narrow for the pearls to pass through, so opt for a reusable or disposable boba straw to enjoy every sip and bite together.

While they’re often grouped together, tapioca pearls and bursting boba create two very different cocktail experiences.

  1. Prepare the wafer-infused milk by soaking one wafer-style cookie (like Nilla) in 60 ml of full-cream milk for two hours, then strain through cheesecloth
  2. Boil the tapioca pearls in water with a dash of sugar, following package instructions
  3. Make the winter melon sugar syrup by boiling equal parts winter melon sugar and water until dissolved
  4. Add rum, orange juice, wafer-infused milk, black tea, and winter melon syrup to a cocktail shaker with ice
  5. Shake until well chilled and double-strain into a glass with tapioca pearls at the bottom
  6. Give it a light stir, add ice, and enjoy with a boba straw

Ingredients

  • 30 ml SKYY Vodka (opens in new window)
  • 75 ml Strawberry and lime syrup*
  • 15 ml Fresh lime juice
  • 2 tbsp Tapioca pearls (boba)
  • 3 oz Sparkling water or club soda
  • Ice

Method

  1. Make the strawberry and lime syrup by adding 1 cup diced strawberries, 0.25 cup white sugar, and half a lime (juice and skins) to a small saucepan
  2. Heat over medium-low for 15 minutes, stirring continuously until a syrup forms, then discard the lime skins and let cool
  3. Prepare the tapioca pearls according to package instructions
  4. Add tapioca pearls and syrup to the bottom of your serving glass
